It's soup season! And this is my favorite spicy, sweet soup of all! It requires some condiments you may not have, but keep them in stock and you are able to make the soup again and again... I make this soup whenever my tummy is upset, or if I am getting a cold, or if I am in need of a warming, nourishing and tasty soup.
Chop all veggies to your desired soup shape. Chop onion, garlic (one clove only or it can make people gassy), ginger and start sautéing in a large soup pot.. till onions are clear. Add a broth enough to cook veggies and have some broth... about 4-6 cups. Add longer cooking veggies (broccoli, chard, kale etc) for about 5 minutes. Add the others and cook for 5 min. Add noodles let simmer another 5 min then add in the flavor! I suggest a tablespoon of miso at least, a teaspoon of curry paste, a squirt of Sriracha or a small shake of chili pepper flakes, a teaspoon of brown sugar, and Bragg's or soy to taste. Tweak the flavors a bit, but it should be good to garnish and enjoy!
